What plant-based means in this guide
We use “plant-based” for an eating pattern centered on foods from plants. People use the term differently, and some include limited animal products while vegan diets exclude animal-derived foods.
For people eating fully vegan, nutrient planning matters. Public-health guidance highlights variety plus attention to fortified foods and nutrients such as vitamin B12, vitamin D, iodine, selenium and calcium.
A simple meal-building framework
Choose a starch or whole grain, add beans or another protein-rich plant food, add vegetables or fruit, then use a sauce, herbs, spices, nuts or seeds for flavor and texture.
You do not need a novel recipe for every meal. Repeating a few flexible formats—bowls, soups, pasta, tacos and tray meals—can make the first weeks easier.
